Simple & Fresh- A Century of Traditional Italian Recipes
is a book about my family and our life in America. It contains the recipes my family brought to this country. It is OUR story.
My wife Nora and I decided to share our love of cooking and the enjoyment we get from showing people the wonderful
and special recipes my family brought to America in the late 1800’s. After several trips to Italy we decided to pattern
our school after the great ones we saw in Italy.
In our travels we were introduced to the different cooking in the various regions in Italy. We learned many
exciting new ideas about regional Italian cooking and want to share some of those secrets with you.
We conduct our “hands on” cooking classes where YOU are the cook! Together we prepare attractive, delicious
dishes with the best and freshest ingredients available just as they do in Italy. Hence “Simple & Fresh”.
We will teach you these dishes from my family, with a Neapolitan flavor as well as dishes from
Florence, Bologna, Sicily and others that we have enjoyed in Tuscany and Rome
You will learn the secrets of great Italian cooking and enjoy memorable Italian meals with good wine in a beautiful
setting. And, you will have accomplished it with our guidance.
Nora, though not Italian, has been the chief cook for our family for many years. She is very exact and precise.
I on the other hand, grew up with our cooking and Italian heritage and am really laid back. Together we make a great teaching team.
